Ahh, there is no choosing of kernel. If you know how to install win9x then you know how to install win2000.
The only problems I keep hearing on news groups is people with non intel mobo seem to be having more problems then people with intel mobo.
    Newsgroups to read are in:
    microsoft.public.win2000.beta.*

this should get on the right track.

There is the choice of using different HALs.
If you have an ACPI compliant BIOS W2K by default chooses the ACPI HAL and routes Interrupts different than the APM HAL.
This works fine for me but could cause trouble on some machines. (e.g five devices on one Interrupt). The different HALs can be chosen from a command line switch when doing a hardcore low level setup not using the "almost no intervention needed" setup usually done by the user. See http://www.jsiinc.com for more information or have a look at http://www.ntfaq.com

        Actually, a minor correction:

        1. When installing Win2k, and it says "Press F6 to load any other drivers...", press F5 instead and you can choose your HAL. Make sure to choose ACPI and not Uniprocessor ACPI, since that's for SMP machines!

        2. You're a bit confused about ACPI. In this mode, it isn't assigning everything the same IRQ. That's an illusion. The truth of the matter is that none of those devices is using an IRQ at all - Windows is handling them. This is, as your might imagine, an improvement. It used to be called "polling" or "device polling".
