Outlook

I'm being forced to use Outlook (spit) at work after being a long time Eudora user. In Eudora I can quickly and easily setup filters so for example all emails from a certain person are filtered into their own mailbox. How the hell do I do this in Outlook? I've never been near Outlook before, I can't see the wood for the trees, I want my Eudora back
