Bard's Tale (1,2,3)
Wizard's Crown (Good ol' CGA...)
Ultima Underworld (ah hell, while we're at it, all the ultima's, though I never played 2 and 8 kind of sucked, and 9 wasn't playable until you had at least 512mb of RAM...)
Dungeon Master
Neverwinter Nights
Stonekeep.
Ishar (1,2,3)
Amberstar! (this game ROCKED)
Well, that's a pretty good list, most of them you could play with emulators now :-) notice only one of them have been made in recent years.

The Thalion team later made Albion for Blue Byte. Amberstar-style DOS RPG, quite good, but I can't get it to run under XP
