I finally got around to trying out Gentoo, and I have to say it is pretty damn cool.
Installation is easy if you follow their little guide. Pretty much like doing LFS except you don't have to sit there and type in all the ./configures, makes and make installs. The packaging system, Portage, handles all dependencies and setting up the USE flags for compiling in features is easy.
I also tried out the LiveCD on an old iMac and it works well too. About to start the install.
Their forum has a Tips and Tricks forum which has a lot of good tidbits for doing fancy things, optimizations and such.
Only problem is that it might take too long for anyone who doesn't have broadband since everything is downloaded prior to install.
