I followed your step-by-step guide. Thanks.
I have some questions though...please bear with the long post (split over several posts due to 1000 character posting limit)
I created the DV template as follows:
File->New...Create...
Video editor tab
TV standard: PAL
Overlay track(s): 3
Apply video filters TICKED
Perform non-square pixel rendering UNTICKED
General tab
Data track: Audio and Video
Frame rate: 25 Frames/sec
Frame type: Field Order A
Frame size
Standard: 720 x 576
Display aspect ratio: 4:3
AVI tab
Compression: DV Video Encoder -- type 1
Data type: 24-Bit RGB
Audio
Format: DV Audio -- PAL
Attributes: 48.000 kHz, 16 Bit, Stereo
Advanced...
Target playback drive: Custom
Check data rate: UNTICKED
Recompress: UNTICKED
Pad frames for CD-ROM TICKED

(...part 2...)
I notice that this is identical to the Ulead supplied template "DV (PAL, 25fps, Audio 48kHz)"
One thing I have been playing with recently is the non-square pixel question. Unfortunately your guide does not mention it at all. I noticed that in setting the template there was an option to "Perform non-square pixel rendering". Since your guide did not specifically mention it I made sure it was unticked.
I noticed in my preview window the popup window had "Non Square Pixel" ticked (just like your guide) even though I had unticked "Perform non-square pixel rendering". Is this a coincidence since I can untick each one seemingly independently?
I then clicked the "Half Size" option and then noted "Frame Size List >" had 384 x 288 ticked (Non Square Pixel TICKED) or none ticked (Non Square Pixel UNTICKED) - due to there not being a 360 x 288 size in the list. If I clicked "Full Size" I got 768 x 576 and 720 x 576 respectively.

(...part 3...)
On looking at the Ulead templates I noticed the DV 4:3 had "Perform non-square pixel rendering" UNTICKED but in the equivalent DV 16:9 template it was TICKED.
I have read that DV is always non-square pixels so why is the option above UNTICKED in DV 4:3 format?
My initial testing in this area involved some Hi-8 tapes captured with PICVideo MJPEG using AVI_IO. These are 704 x 576 and not the 720 x 576 of DV. I created all combinations of MPEG files with Project Settings "non-square" ticked/unticked and with "File->Create->Video File...->Options...(Video Editor tab - perform non-square pixel rendering)". I put all these MPEGs and the original AVI into DVD Workshop and burned a DVD and played it on my TV. It seems that the project setting option has no effect. The rendering option when creating the MPEGs did, however. I needed to untick the option otherwise I got black bars on the sides. If DVD is non-square why untick the option?
Thanks

My current understanding is that the non-square pixel rendering *should* be ticked - which is why the screen shot in my tutorial displays that option with a check next to it.
DV .avi video is based on rectangular pixels.

From Help file:
Perform non-square pixel rendering:
Select to perform non-square pixel rendering when previewing your video. Non-square pixel support helps avoid distortion and keeps the real resolution of DV and MPEG2 content. Generally, the square pixel is suited for the aspect ratio of computer monitors while the non-square pixel is best used for viewing on a TV screen. Remember to take into account which medium will be your primary mode of display.Brian (the devil incarnate)

Thanks for taking the time to help.
I have read the help file and have previously ticked this option before and also unticked. It seems to make the preview window a bit wider or narrower (depending on which is the correct setting). From the help file I am guessing that if your primary visual display is a monitor you need it unticked and if it is a TV (e.g. dual-head) it needs to be ticked. I don't know whether this is correct or not. Also I don't know whether this setting affects MSP projects with mixed video AND still images.
I noticed a difference, as stated in my very long post earlier (sorry), when ticking/unticking the equivalent box in the create MPEG video file function. In that instance I found unticked is what I needed when viewing on my TV. Unless others can shed some real light rather than my conjecture I might need to take this up with Ulead.
