CAT5e would be fine for now, but since you're going through a decent amount of effort, spending a little extra on CAT6 for futureproofing makes sense.

Cool... I just have to try and figure out where to put the cable... The phone socket is nowhere near my PC, so I am not sure what I am going to do with the ADSL Router...

you can probably tuck the cable under the baseboard, if you have wall to wall carpet installed, then get some nice keystone jacks to make pretty cable outlets.
Cat6 seems to be the better choice if you want to have a good connection with Gigabit ethernet.. on 100Mbit ethernet Cat5 or 5e is plenty good

Yeah, keystone jack's would be the geek's choice
I'm gonna have to draw up a plan of the house and scratch my head for a bit.

I am starting to regret painting the living room

Check the specs.. I agree with Wombat.. might as well go with Cat6. MHz rating differs by brand, though.. I have seen it rated as high as 600MHz and as low as 350 MHz and still be called Cat6. Here's a link:

The good stuff is Belden Model#7851A or 7852A. Enter that into the search. It has the center separator and uses a 23ga conductor. Rated at 600MHz.

Gigabit still only needs 250MHz on each of the 4 pairs it uses, if I remember correctly, so a cable rated at 350MHz should be fine.. sure 600MHz is good, as long as the price is close to the other types.

To avoid messing with walls and plaster, I have half a mind to run the cable around the house as it is detached...

sure, then you can hide it with some climbing plants of some sort.

That is a good idea, provided you can keep it safe from passing vandals and accidental knocks...

wouldn't some small plastic conduit work in that respect?
