Seriously, I had the same prob, so I made two files:
1 containing the "mgi cows" and 1 containing the "normal cows"
This way I can simply copy them over each other when I want to play in either world

DuRaNgO hit the nail on the head. This is the only solution for us at the moment (well, most of us- didn't mean to omit you, Beezer, hehe).
Anyway Chuck, if you really want to connect to the MGI server right now, download the twocowfix.zip from the Clan-Mu site. Oboy was gracious enough to post that along with the other files for me when I figured this problem out. It contains the TCowMeshSkins.int and TCowMeshSkins.utx files that were originally distributed with the Epic Bonus Pack. I copied mine to the desktop and sent them to Oboy after I finished reinstalling the Bonus Pack last evening. Use them when you want to connect to some other Bonus Pack server than MGI.
Now install the TCowMeshSkins files from the Cowsh1t.zip file. Put the int file into your UnrealTournament/system directory and the utx file into the UnrealTournament/textures directory. You will (or should be) prompted for whether you want to overwrite the existing files with these. Answer yes (those originals can be recovered from the twocowfix.zip file when you need them, this is why I want you to download that file, too).
At this point, you can start UT, and assuming you've loaded all the other skins and maps from the Clan-Mu site, you will be able to connect to the MGI server and play.
Just remember to restore the original TCowMeshSkins files before trying to connect to other outside Bonus Pack servers, or they'll give you the 'TCowMeshSkins mismatch error', since you will have a different version of those files installed than what ships with the bonus pack. The rest of the skin pack files and maps on the Clan-mu site don't seem to cause problems anywhere, so those are the only two files to worry about for now.
