I have just tried "Colin McRae Rally 2005" demo and it does have Surround Gaming resolutions and the FOV seems to be correct! 
You'll have to add "MULTIDISPLAY3" into the desktop shortcut, so that the target will look something like this: ...Colin McRae 2005 Demo\CMR5.EXE" "MULTIDISPLAY3"
NOTE: However, there is a problem too... For some reason, the game will crash just before the stage, if you set the resolution any higher than 1920x480. I hope Codemasters won't let us down (again).
Btw, I'm using latest certified drivers for my Parhelia.
