  • My favourite light lunch

    I had a treat today. Lamb's kidneys on toast.

    I remove the outside skin and the white core and cut each of 2 kidneys in several pieces, fried them gently in olive oil till the oozing blood became pink. Salt, pepper and a sprinkling of Herbes de Provence and the whole pan poured over two slices of light toast, the oil being better than butter. Mmmmmmmmmmm! Delicious! Kewl!
