Prepare it the same way one would prepare rat.
Whatever that would be.

We ate opossum about once a week when I was a kid, usually the night after we had woodchuck (marmot). Probably half our meals were wild meats/fowl. The below works for either opossum or woodchuck save for the rub. Woodchuck takes a beef or BBQ rub.

1. clean, skin and remove the subcutaneous fat. Chilling the carcass before makes this easier. This removes the gamy flavor some complain of with wild meats.

2. cover with water and dissolve in 1 cup salt (sea salt is better). Soak overnight and in the morning drain and rince well.

3. Stuff & roast @ 350F/60-90 minutes with 1/2 cup chicken broth or water (your taste) and optionally onions, basting every 15-20 minutes. Some add a BBQ, chicken or pork rub, but again that's to taste.
