As for making a profit: increased traffic for their more profitable wares - shells, pitchers, pop, mixed drinks and the side dishes which have a higher markup. It's called a 'loss leader', but not always do they really sell at an actual loss.

As for storing the leftovers: a vacuum sealed bag (Seal a Meal for example) stashed in the fridges meat drawer.
