I recommend getting a physical before fixing this dish
3.5 lbs sliced bacon (peppered bacon optional)
4 lbs ground sausage
1 cup diced onion
1 cup bread crumbs
2 tbsp fresh chopped garlic
1 tsp fresh ground pepper
1 tbsp red pepper flakes
Instructions:
Slice 2 lbs of bacon into 1/4 inch sections. Brown and drain.
Blend diced bacon, sausage and the other ingredients. I use a big Kitchen Aid mixer - darned thing could mix concrete.
Form into a 12-14 inch roll and wrap with bacon slices - 2 overlapping slices per section.
375F for 1 hour 20 minutes or until the center is 160F
Serves 10-12 or you can freeze the leftovers for another meal
Tonight we served it with a green bean casserole (green beans and cream of mushroom soup covered with fried onions) and a pan of corn bread.
