Orange chicken stir fry
Ingredients
4 cups prepared brown rice
1 1/2 cup baby carrots
1 1/2 cup snow peas
2 cup sliced bell peppers (multi-color)
1.5 cup baby corn
1 cup cherry tomatoes
3/4 cup whole water chestnuts
1 1/2 cup broccoli florets
1 lb cubed chicken breasts (or a bag of frozen popcorn chicken)
Breading of choice for chicken (Panko, tempura etc) if needed
Sauce -
1/2 cup orange juice
2 tsp sugar (alt: stevia no-carb sweetener)
1 tbsp light soy sauce
hot sauce (to taste); alt: asian chile sauce
1 tsp sesame oil
2 tbsp corn starch
Mix sauce ingredients snd thicken with corn starch.
Coat & deep fry chicken cubes
Main Preparation:
Stir fry carrots & peas until half done. Add all but broccoli and tomatoes, and stir fry 3 more minutes. Add orange sauce and stir in. Add broccoli, tomatoes and chicken. Simmer covered 4 more minutes. Serve over rice.
