        Rare side of medium rare if in a good restaurant.

        If they are a little, shall we say "provincial", then I'll ask for it bloody and hopefully they won't blacken it too much

        In France, I'll have it medium.

                    When I have steak, which is infrequent, I'll have it medium rare to medium. Given the choice though, I'll take chicken or fish instead. Sushi kicks steak's ASS!

                        Blue, blue or blue, with a sauce aux morilles, or even raw, in a steak tartare. My wife likes it carbonised so it resembles black shoe sole leather: ugh! No chance of us ever being able to share a châteaubriand with Béarnaise sauce

                            Medium to well done then if you're lucky you'll get it meduim. Very few places can get it right I find.

                              I actually prefer the taste of rare, but since having that biology course... The one where everything crawls, encysts or pupates...
                              <shudder>.

                              Freezedried and sterilised. No taste, no smell, no little suprises.

                                As often used here: "a point" (which translates to medium).
                                In an English-Dutch dictionary, the first translation for "blue" is "blauw" (color "blue" in Dutch), the second one is "rood" (color "red" in Dutch !) - with the remark "for meat".
