Triple headed surround gaming is used more than you may think, and it is not confined to parhelia.

Some sim/racing fanatics use multiple cards to get the surround gaming effect.

I think a lot more people would use it, but since Its an expensive option no matter which way you look at it it will be slow to take off.
(three decent moniters is not cheap)
